Wraps

  • 8 rice paper wraps

Peanut Sauce (natural)

  • 1/3 cup natural peanut butter
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tbsp natural honey
  • 1 clove garlic, minced
  • 1 tsp freshly grated ginger

Garnishes

  • 1/4 cup chopped peanuts
  • Wedges of lime (optional)

Instructions

  1. Prepare the Peanut Sauce (natural): In a bowl, combine natural peanut butter, apple cider vinegar, vegetarian Worcestershire sauce, natural honey, minced garlic, and grated ginger. Whisk until smooth and creamy. Adjust the taste by adding more vinegar or honey as desired.
  2. Marinate the Chicken: Toss the sliced chicken strips with a few tablespoons of the prepared peanut sauce and let sit for 15 minutes to infuse flavor.
  3. Cook the Chicken: Heat a pan over medium heat. Add the marinated chicken strips and cook until golden and thoroughly cooked. Remove from heat and toss with a bit more peanut sauce while still warm.
  4. Prep the Veggies: Wash and slice cucumbers, bell peppers, and carrots into matchstick-size pieces. Roughly chop the fresh cilantro or basil. Pat all veggies dry.
  5. Soften the Rice Paper Wraps: Fill a shallow dish with warm water. Briefly dip one rice paper wrap at a time until soft but still slightly firm to the touch.
  6. Assemble the Wraps: Lay the softened rice paper flat on a clean surface. Place a few strips of chicken, a handful of veggies, a sprinkle of chopped peanuts, and a drizzle of peanut sauce in the center. Fold in the sides, then roll tightly to secure all ingredients inside. Repeat for all wraps.
