Description

Strawberry Chicken is a delicious and unique weeknight meal combining the natural sweetness of fresh strawberries with tender, juicy chicken. This quick and simple recipe features fresh ingredients creating a balanced, vibrant dish that is healthy, visually appealing, and perfect for any busy evening.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Sea salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Strawberry Sauce

  • 1 cup fresh strawberries, halved or quartered
  • 2 garlic cloves, minced
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • Pinch of sea salt
  • 1/2 teaspoon natural gelling agent

Garnish (Optional)

  • Fresh basil leaves

Instructions

  1. Prep Your Ingredients: Wash and slice the fresh strawberries into halves or quarters depending on their size. Mince the garlic cloves finely. Season both sides of the chicken breasts evenly with sea salt and black pepper.
  2. Sear the Chicken: Heat olive oil in a skillet over medium heat. Once hot, add the chicken breasts and cook for about 5 to 6 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside, keeping it warm.
  3. Make the Strawberry Sauce: In the same skillet, add the minced garlic and sauté for one minute until fragrant. Stir in the fresh strawberries, apple cider vinegar, vegetarian Worcestershire sauce (natural), and a pinch of sea salt. Cook the mixture until the strawberries begin to break down and the sauce thickens slightly. Add the natural gelling agent to reach your preferred sauce consistency.
  4. Combine and Serve: Return the cooked chicken to the skillet, spoon the strawberry sauce over the top, and allow the flavors to meld together over low heat for another two minutes. Just before serving, sprinkle fresh basil leaves on top for an herbal burst of flavor.

Notes

  • Choose ripe, fresh strawberries for the best natural flavor in your sauce.
  • Do not overcook the chicken to keep it juicy and tender.
  • If strawberries are tart, add a small drizzle of grape juice for balanced sweetness.
  • Use the natural gelling agent sparingly to coat the chicken beautifully without heavy texture.
  • Let the chicken rest briefly after cooking to allow the juices to redistribute for optimal tenderness.
