Ingredients

Scale

Main Ingredients

  • 4 cups fresh baby spinach leaves
  • 8 oz pasta of your choice (spaghetti, penne, fusilli)
  • 3 garlic cloves, freshly minced
  • 2 tablespoons olive oil
  • 1/2 cup plant-based cheese (plant-based), shredded or crumbled
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your chosen pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1 cup of the pasta cooking water for later use.
  2. Sauté the Garlic and Spinach: In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Gradually add the fresh spinach leaves, stirring continuously until they are wilted and tender.
  3. Combine Pasta and Spinach: Add the drained pasta to the skillet with the wilted spinach. Toss gently to combine, adding reserved pasta water little by little to create a smooth, light sauce that coats each pasta strand.
  4. Add Flavor Enhancers: Stir in the plant-based cheese (plant-based), vegetarian Worcestershire sauce (natural), fresh lemon juice, and red pepper flakes. Mix well and season with salt and pepper to taste, adjusting as needed.
  5. Serve and Enjoy: Transfer the vibrant Spinach Pasta to serving plates. Garnish with fresh herbs such as basil or parsley, toasted nuts, or nutritional yeast if desired. Serve warm for the best flavor and texture experience.

Notes

  • Use the freshest spinach possible for optimal flavor and texture.
  • Reserve and add pasta water gradually to achieve a creamy sauce without extra cream.
  • Avoid overcooking spinach to preserve bright color and nutrients.
  • Choose a mild plant-based cheese (plant-based) to complement the greens without overpowering them.
  • Taste and season gradually to balance salt, acidity, and spice perfectly.
