Ingredients

Scale

Pasta and Protein

  • 8 oz rotini or penne pasta
  • 6 slices smoked turkey bacon

Vegetables

  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely sliced
  • 1 jalapeño pepper, finely diced (seeds optional for heat adjustment)
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 3 tbsp apple cider vinegar (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1/4 cup olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 clove garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook rotini or penne pasta according to package instructions until al dente. Drain and rinse with cold water to stop cooking and cool the pasta. Set aside in a large mixing bowl.
  2. Prepare the Turkey Bacon and Veggies: While the pasta cooks, crisp the smoked turkey bacon in a skillet over medium heat until golden and slightly crunchy. Drain on paper towels, then chop into bite-sized pieces. Finely dice the red and green bell peppers, cherry tomatoes, red onion, and jalapeño peppers.
  3. Mix the Dressing: In a jar or bowl, combine apple cider vinegar, vegetarian Worcestershire sauce, olive oil, ground cumin, smoked paprika, minced garlic, salt, and pepper. Shake or whisk vigorously until well emulsified and flavorful.
  4. Toss Everything Together: Add the chopped turkey bacon, diced vegetables, and chopped cilantro to the pasta. Pour the dressing over and toss gently but thoroughly to coat every bite with the spicy, zesty goodness.
  5. Chill and Serve: Allow the salad to chill in the refrigerator for at least 30 minutes so the flavors meld beautifully. Before serving, give it a final toss and adjust seasoning if needed.

Notes

  • Rinse pasta under cold water to prevent sticking and keep it fresh for the salad.
  • Dice vegetables evenly to ensure balanced taste in every forkful.
  • Add jalapeño seeds sparingly to control the spice level.
  • Chilling helps the flavors blend and enhances the overall taste.
  • Toss cilantro just before serving to keep it bright and fresh.
