Instructions

  1. Prepare the Filling: In a mixing bowl, combine ground chicken, finely chopped green onions, minced garlic, and grated ginger. Add vegetarian Worcestershire sauce (natural), soy sauce (natural), sesame oil (natural), and a splash of apple cider vinegar. Mix thoroughly until well combined and set aside.
  2. Assemble the Gyoza: Place a small spoonful of the filling in the center of each gyoza wrapper. Wet the edges of the wrapper with water, fold it in half, and press firmly to seal, creating slight pleats for a traditional gyoza appearance.
  3. Pan-Fry the Gyoza: Heat vegetable oil in a non-stick pan over medium heat. Arrange the gyoza flat side down in the pan and cook until the bottoms turn golden brown and crispy, about 2 to 3 minutes.
  4. Smashed Cooking Technique: Pour enough water into the pan to cover the bottom, then immediately cover with a lid. Let the gyoza steam until the water evaporates completely and the filling is cooked through. Remove the lid and gently press down on the gyoza with a spatula to ‘smash’ them, creating the signature crispy texture.
