Instructions

  1. Prepare the potatoes and bacon: Wash and peel the Yukon Gold potatoes, then slice them evenly about 1/8 inch thick to ensure consistent cooking. Cook the smoked turkey bacon in a skillet over medium heat until crisp, then chop into bite-sized pieces. Set aside both the sliced potatoes and cooked bacon for layering.
  2. Make the creamy sauce: In a saucepan, combine the plant-based milk, vegetable broth, minced garlic, sliced onions, vegetarian Worcestershire sauce (natural), and a pinch of salt and pepper. Sprinkle in the natural gelling agent and whisk continuously over medium heat until the sauce thickens and develops a glossy texture. Remove from the heat and stir in the plant-based cheese until melted and smooth.
  3. Layer the scalloped potatoes: Generously grease a baking dish. Layer half of the potato slices on the bottom, then sprinkle half of the cooked smoked turkey bacon and half of the fresh thyme or rosemary over the potatoes.
