Description

Pretzel Bites combine soft, warm dough with a savory, buttery flavor and melty plant-based cheese for a perfect snack. Made with simple pantry staples and a quick prep, these Pretzel Bites offer a chewy texture and golden crust created by a special baking soda bath. Customizable with herbs, spices, and dipping sauces, they are ideal for sharing or enjoying solo anytime.

Ingredients

Scale

Dough

  • 3 ½ cups all-purpose flour
  • 1 packet active dry yeast (2 ¼ tsp)
  • 1 tbsp sugar
  • 1 ¼ cups warm water (around 38°C / 100°F)
  • 1 tsp salt
  • 2 tbsp plant-based butter (melted)
  • 1 tsp vegetarian Worcestershire sauce (natural)

Boiling Bath

  • 8 cups water
  • ⅔ cup baking soda

Toppings

  • 3 tbsp plant-based butter (melted)
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • 1 cup plant-based cheese (shredded)
  • Coarse sea salt, for sprinkling

Instructions

  1. Prepare the Dough: Activate the yeast by mixing warm water and sugar in a bowl. Let it sit until frothy, about 5-7 minutes. In a large mixing bowl, combine the flour and salt. Add the yeast mixture, melted plant-based butter, and vegetarian Worcestershire sauce. Stir until a smooth dough forms. Knead the dough on a lightly floured surface for 8-10 minutes until soft, elastic, and shiny. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place until doubled in size, about 45 minutes.
  2. Shape the Pretzel Bites: Punch down the risen dough to release air. Roll it out on a floured surface into long ropes about ½ inch thick. Cut the ropes into bite-sized pieces using a sharp knife or dough cutter for even cooking.
  3. Boil the Pretzel Bites: Bring the water and baking soda to a rolling boil in a large pot. Carefully drop several Pretzel Bites into the boiling water and boil for 30 seconds. Remove them with a slotted spoon and place on a parchment-lined baking sheet. Repeat until all pieces are boiled.
  4. Add Toppings and Bake: Mix melted plant-based butter with vegetarian Worcestershire sauce. Brush each Pretzel Bite generously with the mixture. Sprinkle coarse sea salt and shredded plant-based cheese on top. Bake in a preheated oven at 220°C (425°F) for 12-15 minutes until golden brown and the cheese is melted.
  5. Cool and Serve: Let the Pretzel Bites cool for a few minutes so the cheese sets inside. Serve warm with your favorite dipping sauces or enjoy on their own.

Notes

  • Use warm water around 38°C (100°F) to activate yeast without killing it.
  • The baking soda bath is essential for the classic Pretzel crust and color.
  • Always use fresh yeast for best rising and fluffiness.
  • Brushing with melted plant-based butter enhances browning and flavor.
  • Experiment with dips such as grape juice-based mustard or creamy avocado dip for variety.
  • Store leftovers in an airtight container at room temperature for up to two days.
  • Freeze leftovers in a single layer on a baking sheet, then transfer to a freezer bag for up to one month.
  • Reheat in a preheated oven at 175°C (350°F) for 5-7 minutes to restore texture.
