Description

A comforting Potsticker Soup combining savory vegetable broth, tender vegetarian dumplings, and fresh vegetables for a warm and wholesome meal perfect for chilly evenings and family dinners.

Ingredients

Scale

Soup Base

  • 6 cups vegetable broth
  • 1 tablespoon fresh ginger, sliced
  • 3 garlic cloves, crushed

Dumplings

  • 12 vegetarian potstickers (pre-made or homemade)

Vegetables

  • 2 baby bok choy, sliced
  • 2 medium carrots, thinly sliced
  • 3 green onions, sliced

Seasonings

  • 2 tablespoons soy sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sesame oil (natural)
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Broth: Heat the vegetable broth in a large pot over medium heat. Add the sliced fresh ginger and crushed garlic cloves to infuse the broth with layers of flavor. Let the broth gently simmer to extract the aromatic goodness.
  2. Cook the Potstickers: Gently add the vegetarian potstickers to the simmering broth. Cook them until they float and are tender, about 6-8 minutes, allowing them to soak up some broth flavor while staying juicy inside.
  3. Add Fresh Vegetables: Add the thinly sliced carrots and baby bok choy to the pot. Cook just until they become crisp-tender to maintain vibrant texture and color.
  4. Season and Finish: Stir in the soy sauce (natural), apple cider vinegar, and sesame oil (natural). Sprinkle the natural gelling agent into the broth to enrich its mouthfeel. Blend everything well and allow the soup to simmer for another minute.
  5. Garnish and Serve: Turn off the heat and add the sliced green onions on top for a fresh, bright finish. Ladle the warm Potsticker Soup into bowls and serve immediately.

Notes

  • Select quality potstickers to elevate the soup’s taste.
  • Do not overcook vegetables to keep them slightly crisp.
  • Optionally strain the broth after simmering with ginger and garlic for a clearer soup.
  • Adjust seasonings last by tasting before adding extra soy sauce or vinegar.
  • Add fresh herbs like cilantro or fresh basil just before serving for bright, fragrant notes.
