Adaptable and nutritious, it offers a balanced meal packed with protein, vitamins, and carbohydrates.

Ingredients

Scale

Protein

  • 500g boneless, skinless chicken thighs, diced

Produce

  • 1 1/2 cups fresh pineapple chunks
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, sliced (for garnish)

Grains

  • 1 cup long grain rice

Liquids & Sauces (natural)

  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 2 cups water or broth

Oils & Seasonings

  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Other

  • 1 teaspoon natural gelling agent (mixed with water to thicken sauce)

Instructions

  1. Prepare the Ingredients: Dice the chicken thighs into bite-sized pieces. Chop fresh pineapple into chunks. Dice bell pepper, mince garlic and ginger, and slice green onions for garnish.
  2. Sauté Aromatics and Chicken: Heat olive oil in a large pan over medium heat. Add minced garlic and ginger, stirring until fragrant. Add chicken pieces and cook until golden brown on all sides.
  3. Add Vegetables and Pineapple: Stir in diced bell peppers and pineapple chunks. Cook together for a few minutes until softened and flavors combine.
  4. Stir in Rice and Sauces: Add long grain rice, vegetarian Worcestershire sauce (natural), apple cider vinegar, salt, and pepper. Pour in enough water or broth to cook the rice, stirring everything to combine thoroughly.
  5. Cook and Thicken: Lower heat to low, cover the pan, and let the rice absorb liquid fully over 15 to 20 minutes. Once cooked, fluff the rice gently and stir in the natural gelling agent mixed with water to thicken the sauce slightly.
  6. Garnish and Serve: Sprinkle sliced green onions over the dish just before serving to add a fresh and crisp contrast to the warm pineapple chicken and rice.

Notes

  • Use fresh pineapple and aromatics for brighter natural flavors.
  • Watch rice closely to avoid overcooking and maintain fluffiness.
  • Mix sauces separately in a small bowl before adding to the dish to ensure even flavor distribution.
  • Allow the dish to rest off heat for a few minutes before serving to meld the flavors.
  • Adjust heat by adding mild chili peppers if you desire a gentle spice that complements the sweetness.
