Description

Monkey Bread is a delicious, easy-to-make pull-apart pastry featuring soft, bite-sized plant-based dough balls coated in a warm cinnamon sugar mixture and a sticky, sweet glaze. Perfect for cozy mornings, this treat offers a delightful contrast of soft interior and caramelized exterior with inviting aromas and flavors suitable for various diets.

Ingredients

Scale

For the Dough Balls

  • Soft plant-based dough, enough to form 30-35 bite-sized balls (about 1 inch diameter each)

For the Cinnamon Sugar Coating

  • 1/2 cup sugar
  • 2 tablespoons natural cinnamon

For the Sticky Glaze

  • 1/2 cup plant-based butter
  • 2/3 cup maple syrup (natural)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon vanilla extract (natural)
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Prepare the Dough Balls: Break the plant-based dough into small pieces and roll each into smooth balls about one inch in diameter. These will form the soft, pillowy texture characteristic of Monkey Bread.
  2. Coat with Cinnamon Sugar: In a bowl, combine the sugar and natural cinnamon. Roll each dough ball generously in this mixture, ensuring every surface is coated to infuse warm, sweet flavor and create a slightly crunchy texture when baked.
  3. Prepare the Sticky Glaze: In a saucepan, melt the plant-based butter over low heat. Add maple syrup (natural), apple cider vinegar, vegetarian Worcestershire sauce (natural), vanilla extract (natural), and natural gelling agent. Stir continuously until the glaze thickens to a consistency that will coat the dough balls evenly.
  4. Assemble in the Pan: Grease a bundt or deep round pan well. Layer the coated dough balls evenly inside the pan, then pour the sticky glaze over the top to soak into the layers, promising a caramelized crust after baking.
  5. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake the assembled Monkey Bread for 35-40 minutes or until golden brown and bubbly. Allow to cool for at least 10 minutes before inverting onto a serving plate.

Notes

  • Use freshly prepared or high-quality plant-based dough for best results.
  • Adjust the cinnamon sugar ratio according to your sweetness preference for perfect caramelization.
  • Monitor glaze thickness closely to avoid it becoming too runny or too stiff.
  • Grease the pan thoroughly to ensure easy release of the Monkey Bread.
  • Allow cooling time of at least 10 minutes before serving to let the glaze set properly.
