Mexican Chicken with Cheese Sauce (plant-based) is a quick and comforting dish featuring tender chicken breasts in a creamy, flavorful plant-based cheese sauce (natural). Perfect for busy weeknights, it combines simple pantry staples and fresh produce with Mexican-inspired spices, delivering a warm, satisfying meal that is mild, family friendly, and easy to customize.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Vegetable Base

  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cups fresh or canned diced tomatoes
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 2 tbsp grape juice

Plant-Based Cheese Sauce (Natural)

  • 1 cup plant-based cheese sauce (natural)
  • 1/4 tsp turmeric (optional)
  • 1/4 tsp smoked paprika (optional)
  • 1/2 tsp natural gelling agent

Finishing Touches

  • 2 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and season both sides evenly with salt, pepper, ground cumin, and chili powder. Heat olive oil in a large pan over medium heat and sear the chicken breasts for about 5-7 minutes per side, or until golden brown and cooked through. Remove from the pan and set aside to rest.
  2. Make the Flavorful Base: In the same pan, add a little more olive oil if necessary. Sauté the chopped onions, minced garlic, and bell peppers until soft and aromatic, about 5 minutes. Stir in the diced tomatoes, vegetarian Worcestershire sauce (natural), and grape juice. Let the mixture simmer gently for about 5 minutes to blend the flavors.
  3. Prepare the Plant-Based Cheese Sauce (Natural): In a separate pot over low heat, whisk together the plant-based cheese sauce (natural) with turmeric, smoked paprika, and the natural gelling agent. Stir slowly until the sauce thickens to a creamy consistency, ensuring the texture melds perfectly into the dish.
  4. Combine and Simmer: Slice the cooked chicken breasts and return them to the pan with the tomato and pepper base. Pour the warm plant-based cheese sauce (natural) over the top and gently simmer for 3-5 minutes, allowing the chicken to soak up the flavors and the sauce to thicken slightly.
  5. Final Touches: Remove from heat and finish with a squeeze of fresh lime juice. Sprinkle chopped fresh cilantro over the dish for a bright, fresh flavor. Serve immediately and enjoy.

Notes

  • Marinate the chicken briefly with spices ahead of cooking for extra flavor.
  • Simmer the sauce gently to prevent separation of the plant-based cheese sauce (natural).
  • Add cilantro and lime juice just before serving to keep their flavors vibrant.
  • Use ripe tomatoes and fresh bell peppers for best taste.
  • Adjust chili powder according to your preferred spice level.
