This quick and easy recipe is perfect for a wholesome lunch or dinner, delivering a satisfying blend of textures and flavors inspired by the Mediterranean diet.

Ingredients

Scale

Base Ingredients

  • 4 flour tortillas
  • 6 slices smoked turkey bacon
  • 1 cup plant-based cheese (shredded)

Vegetables

  • 1 red bell pepper, sliced
  • 1 yellow or orange bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 cups fresh spinach leaves
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced

Seasonings & Others

  • 2 tablespoons olive oil (natural)
  • 1 teaspoon apple cider vinegar (natural)
  • Salt to taste (sea salt)
  • Ground black pepper to taste
  • 1/2 teaspoon natural gelling agent (optional)

Instructions

  1. Prepare the Vegetables: Wash and slice the bell peppers, red onions, cherry tomatoes, and spinach. Mince the garlic cloves finely to ensure even cooking and a colorful, balanced filling.
  2. Cook the Smoked Turkey Bacon: Heat a skillet over medium heat and cook the smoked turkey bacon until crispy and slightly browned. Remove from the pan and chop into smaller pieces for even distribution.
  3. Sauté the Vegetables: Using the same skillet, add olive oil (natural) and sauté the minced garlic, bell peppers, and red onions for about 4-5 minutes until fragrant and slightly softened. Add spinach and cherry tomatoes in the last minute, allowing them to wilt without becoming mushy.
  4. Add the Flavor Boosters: Sprinkle salt, ground black pepper, and pour a splash of apple cider vinegar (natural) over the sautéed veggies, stirring gently to combine. Add natural gelling agent if a firmer filling is desired.
  5. Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle a generous layer of plant-based cheese over one half, then spoon on the sautéed vegetable and turkey bacon mixture. Add another layer of cheese on top to help bind, then fold the tortilla over carefully.
  6. Cook the Quesadillas: Heat a clean skillet or griddle over medium heat and lightly grease it. Place the assembled quesadilla onto the pan and cook for 3-4 minutes on each side until the tortilla is golden brown and the cheese has melted inside. Press lightly with a spatula to bind the filling.
  7. Serve Warm: Remove from heat, slice into wedges, and serve immediately to enjoy the melty, flavorful Mediterranean quesadillas at their best.

Notes

  • Slice vegetables and turkey bacon evenly for balanced cooking.
  • Cook quesadillas over medium heat to prevent burning and ensure cheese melts properly.
  • Layer plant-based cheese on both sides of the filling for better binding.
  • Press the quesadilla gently while cooking to help everything stick together.
  • Use fresh, ripe vegetables for the brightest flavor and best texture.
