Description

The Maple Dijon Chicken Bowl with Sweet Potatoes is a hearty and flavorful meal combining tender chicken, smoky turkey bacon, and naturally sweet roasted sweet potatoes under a luscious maple dijon glaze. This wholesome bowl balances sweet, smoky, and tangy flavors, making it perfect for easy weeknight dinners or vibrant meal prep options.

Ingredients

Scale

Chicken and Marinade

  • 2 skinless chicken breasts
  • 2 tablespoons Dijon mustard (natural)
  • 2 tablespoons pure maple syrup (natural)
  • 2 garlic cloves, minced
  • 1 teaspoon vegetarian Worcestershire sauce
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Sweet Potatoes

  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon fresh thyme leaves

Turkey Bacon and Garnishes

  • 4 slices smoky turkey bacon
  • Fresh chopped parsley or green onions, for garnish

Instructions

  1. Prepare the sweet potatoes: Preheat your oven to 425°F (220°C). Peel and dice the sweet potatoes, then toss them with olive oil, salt, pepper, and fresh thyme. Spread evenly on a baking sheet and roast until tender and caramelized, about 25-30 minutes, turning halfway through.
  2. Cook the turkey bacon: While sweet potatoes roast, cook the turkey bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain excess oil, then chop into bite-sized pieces.
  3. Marinate the chicken: In a small bowl, whisk together Dijon mustard (natural), pure maple syrup (natural), minced garlic, vegetarian Worcestershire sauce, olive oil, salt, and pepper. Coat the chicken breasts evenly with the marinade and let them rest for 10-15 minutes.
  4. Cook the chicken breasts: Heat a skillet over medium heat and cook the marinated chicken breasts for 5-7 minutes per side until fully cooked and golden brown. Let the chicken rest for a few minutes before slicing.
  5. Assemble the bowl: Layer roasted sweet potatoes at the base of your bowl, arrange sliced chicken on top, and sprinkle with crispy turkey bacon. Drizzle any extra maple dijon sauce from the pan for added moisture and flavor. Garnish with fresh chopped parsley or green onions.

Notes

  • Marinate chicken for at least 15 minutes to enhance flavor.
  • Cut sweet potatoes uniformly for even roasting.
  • Allow chicken to rest to keep it juicy and tender.
  • Use fresh herbs to add brightness to the dish.
  • Drain turkey bacon well on paper towels to keep it crispy.
