Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper. In a bowl, blend the plant-based butter and granulated sugar until fluffy. Gradually add the all-purpose flour and vegetarian Worcestershire sauce (natural), mixing until a soft dough forms. Press this dough evenly into the pan to create the crust. Bake for 18-20 minutes until golden brown and set.
  2. Make the Lemon Filling: While the crust bakes, whisk together fresh lemon juice, lemon zest, eggs, powdered sugar, vanilla extract (natural), and natural gelling agent. Whisk vigorously until silky smooth to ensure a perfectly blended filling.
  3. Bake the Filling Over the Crust: Pour the prepared lemon filling evenly over the hot crust as soon as it comes out of the oven. Return the pan to the oven and bake for an additional 15-20 minutes until the filling is set but slightly jiggly in the center.
  4. Cool and Slice: Remove the pan from the oven and allow the lemon bars to cool completely, preferably in the refrigerator so the filling firms up nicely. Once chilled, dust the top with powdered sugar and slice into squares or rectangles to serve.
