Instructions

  1. Activate the Yeast: Combine warm water, sugar, and active dry yeast in a bowl. Let it sit for about 10 minutes until it foams, indicating the yeast is active and ready.
  2. Mix the Dough: In a large bowl, mix the flour and salt, then add the yeast mixture and olive oil (natural). Stir until the dough starts to come together, then knead for 8 to 10 minutes until smooth and elastic, by hand or with a stand mixer.
  3. First Rise: Place the dough in a lightly oiled bowl, cover it with a clean towel, and let it rise in a warm spot for about one hour until doubled in size.
  4. Shape the Loaves: Punch down the risen dough to release air, then shape into long oval loaves or round boule shapes. Place the shaped dough on a baking sheet lined with parchment paper.
  5. Second Rise: Cover the dough and let it rise for another 30 to 45 minutes until light and puffy.
  6. Score and Bake: Make shallow cuts on top of the dough with a sharp knife or bread lame. Bake in a preheated oven at 220°C (425°F) for 25 to 30 minutes until the crust is golden and crisp.
