Instructions
- Prepare the Pasta: Cook your pasta in generously salted boiling water until al dente. Drain the pasta and reserve one cup of pasta water to use later for the sauce.
- Cook Turkey Bacon and Aromatics: Heat olive oil in a large skillet and cook turkey bacon until crispy. Remove the bacon and place on paper towels to drain excess fat. In the same skillet, sauté minced garlic until fragrant, being careful not to burn it.
- Create the Goat Cheese Sauce: Add the plant-based goat cheese, vegetarian Worcestershire sauce (natural), lemon juice (natural), and a small amount of reserved pasta water into the skillet. Stir gently while warming until the cheese melts into a creamy sauce thickened naturally by the gelling agent.
- Combine and Add Greens: Return the crispy turkey bacon to the skillet and toss in fresh spinach or arugula. Mix gently until the greens wilt slightly, adding freshness to the sauce.
- Toss Pasta in Sauce: Add the cooked pasta to the sauce and toss thoroughly to coat every strand. Adjust seasoning with salt and pepper to taste. Add more pasta water if the sauce needs loosening.
