Ingredients
Scale
Potatoes
- 4 cups Russet or Yukon Gold potatoes, peeled and chopped
Smoky Elements
- 6 slices smoked turkey bacon, diced
Vegetables and Herbs
- 1 medium yellow onion, finely chopped
- 2 tablespoons fresh dill, chopped
Dressing
- 1/4 cup apple cider vinegar (natural)
- 2 teaspoons vegetarian Worcestershire sauce (natural)
- 1 tablespoon Dijon mustard (natural)
- 3 tablespoons olive oil
- 1/2 teaspoon natural gelling agent
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the Potatoes: Boil peeled and chopped potatoes in salted water until just tender but still holding their shape, about 10 to 15 minutes depending on size. Drain and let cool slightly.
- Prepare the Bacon and Onions: In a large skillet, cook diced smoked turkey bacon until crisp. Remove bacon and drain excess fat. In the same skillet, lightly sauté finely chopped yellow onion in remaining bacon fat until translucent and fragrant.
- Make the Tangy Dressing: While the onions cool, whisk together apple cider vinegar, vegetarian Worcestershire sauce (natural), Dijon mustard (natural), olive oil, salt, and black pepper in a bowl until fully combined. Stir in the natural gelling agent to slightly thicken the dressing and set aside.
- Combine Everything: Gently toss warm potatoes with sautéed onions, crispy turkey bacon, and fresh dill. Pour dressing over and stir lightly to evenly coat all ingredients. Adjust seasoning if needed.
- Chill and Serve: Allow salad to cool to room temperature, then refrigerate for at least one hour to meld flavors. Serve chilled or at room temperature for best taste and texture.
Notes
- Choose Yukon Gold or Russet potatoes to hold shape and maintain creamy texture.
- Do not overcook potatoes to keep firmness after mixing.
- Toss potatoes with dressing while warm for better flavor absorption.
- Adjust acidity by starting with less vinegar and adding more after mixing.
- Add fresh herbs like dill last to preserve their fragrance and vibrant color.
