  • 100g smoked turkey bacon, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup plant-based parmesan cheese, shredded
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1/2 cup whole wheat or gluten-free breadcrumbs
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Aromatics and Bacon: Finely chop the smoked turkey bacon. Heat olive oil in a pan over medium heat, sauté the bacon until crisp. Add minced garlic and cook for about 30 seconds until fragrant, taking care not to burn the garlic. Remove from heat and set aside.
  2. Combine the Ingredients: In a large bowl, gently mix together the ground chicken, sautéed bacon-garlic mixture, plant-based parmesan cheese, breadcrumbs, egg, vegetarian Worcestershire sauce (natural), freshly chopped parsley and thyme. Season with salt and pepper. Combine just until ingredients are evenly incorporated to avoid overmixing.
  3. Shape the Meatloaf: Line a baking pan with parchment paper. Transfer the meat mixture onto the pan and shape into a loaf approximately 8 inches long and 4 inches wide. Ensure the loaf is of uniform thickness for even baking.
  4. Bake for Perfection: Preheat the oven to 180°C (350°F). Bake the meatloaf for 45 to 55 minutes, or until the internal temperature reaches 74°C (165°F) and the top is golden brown. Once done, let the meatloaf rest for at least 10 minutes before slicing.
