Instructions

  2. Caramelize the Onions: Heat olive oil in a large skillet over medium-low heat. Add the thinly sliced yellow onions and cook slowly, stirring frequently to prevent burning. After about 20 minutes, onions should be deep golden brown and sweet.
  3. Cook the Smoked Turkey Bacon: In a separate pan, cook the smoked turkey bacon until crisp. Drain on paper towels and chop into bite-sized pieces.
  4. Combine Flavors: Add minced garlic and fresh thyme to the caramelized onions. Stir in vegetarian Worcestershire sauce (natural) and a splash of apple cider vinegar (natural). Mix well and remove from heat.
  5. Assemble and Cook: Butter a baking dish and layer half of the parboiled potatoes inside. Spread half the onion mixture over the potatoes, then sprinkle with half of the plant-based cheese. Repeat with remaining potatoes and onions. Top with chopped smoked turkey bacon and remaining plant-based cheese.
