Ingredients

Scale

Main Ingredients

  • 8 oz pasta of choice (spaghetti, linguine, or preferred shape)
  • 4 strips smoked turkey bacon
  • 1 cup plant-based cheese
  • 3 garlic cloves, minced
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1/2 cup grape juice
  • 2 tbsp olive oil (natural)
  • 1 tsp natural gelling agent (e.g., pectin or agar) dissolved in water
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Cook your chosen pasta according to the package instructions until al dente. Drain the pasta, reserving about one cup of the pasta water, and set aside.
  2. Cook the Smoked Turkey Bacon: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the smoked turkey bacon strips and sauté until crisp and golden, releasing their smoky aroma. Remove the bacon from the pan and set aside, leaving the bacon fat in the skillet.
  3. Build the Sauce: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant, stirring constantly to avoid burning. Pour in the grape juice and vegetarian Worcestershire sauce (natural), stirring to combine. Add the natural gelling agent dissolved in a little water, and let the sauce simmer for 2 to 3 minutes to thicken and allow flavors to meld.
  4. Finish the Dish: Add the cooked pasta to the skillet along with the crispy turkey bacon and plant-based cheese. Toss everything together thoroughly to coat the pasta evenly with the creamy, flavorful sauce. If the sauce is too thick, gradually add the reserved pasta water to achieve your desired consistency. Season with salt and freshly ground black pepper to taste.
  5. Garnish and Serve: Sprinkle freshly chopped parsley over the pasta for freshness and color. Serve immediately while warm and enjoy the harmonious blend of smoky, creamy, and tangy flavors.

Notes

  • Use good-quality pasta that holds sauce well for best texture.
  • Reserve pasta water to help sauce cling and become luscious without heaviness.
  • Cook garlic carefully over moderate heat to avoid burning.
  • Add the natural gelling agent gradually to control sauce thickness.
  • Add fresh herbs last to keep their flavor bright and vibrant.
