Description

Creamy Ditalini Pasta combines tender ditalini pasta with smoked turkey bacon, melted plant-based cheese, and a splash of apple cider vinegar for a subtle zing. This comforting and flavorful dish is simple to prepare, featuring a luscious plant-based cream sauce that perfectly coats every bite. Enhanced with garlic, onion, and fresh parsley, it offers a delicate balance of smoky, creamy, and bright flavors ideal for a cozy and satisfying meal.

Ingredients

Scale

Main Ingredients

  • 200g ditalini pasta
  • 100g smoked turkey bacon
  • 150g plant-based cheese, shredded
  • 1 cup plant-based heavy cream
  • 1 tablespoon apple cider vinegar (natural)
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon natural gelling agent

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the ditalini pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water in case you want to loosen the sauce later.
  2. Prepare the Smoked Turkey Bacon: In a large skillet, heat olive oil over medium heat. Add the smoked turkey bacon and cook until it gets crispy edges. Remove bacon from pan and set on paper towels to drain excess oil.
  3. Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Sauté until fragrant and translucent, about 3-4 minutes, to layer flavor into the dish.
  4. Make the Cream Sauce: Lower heat and stir in the plant-based heavy cream along with the shredded plant-based cheese. Add a pinch of natural gelling agent to achieve that perfect sauce thickness. Pour in a splash of apple cider vinegar (natural) and stir well. Let it simmer gently, allowing the sauce to thicken and meld flavors.
  5. Combine Pasta and Sauce: Add the cooked ditalini pasta and crispy smoked turkey bacon back into the skillet, mixing gently so every bite is coated in creamy goodness. Adjust seasoning with salt and pepper as needed.
  6. Garnish and Serve: Sprinkle freshly chopped parsley on top for a bright, fresh finish and serve warm for maximum comfort and enjoyment.

Notes

  • Cook pasta al dente to prevent it from becoming mushy in the sauce.
  • Reserve some pasta water to loosen the sauce if it becomes too thick.
  • Use quality plant-based cheese with good melting ability for a smooth sauce.
  • Add apple cider vinegar (natural) gradually to balance tanginess without overpowering.
  • Do not skip crispy bacon; it adds a smoky crunch and texture contrast.
