Description

A warm and comforting Creamy Chicken Orzo featuring tender chicken, velvety plant-based dairy, and delicate orzo pasta. This quick one-pot dish is perfect for a wholesome weeknight dinner with balanced protein, carbs, and vegetables, enhanced by fresh spinach and brightened with lemon juice and vegetarian Worcestershire sauce.

Ingredients

Scale

Protein and Pasta

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup orzo pasta

Aromatics and Vegetables

  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 cups fresh spinach leaves

Liquids and Sauces

  • 4 cups vegetable broth
  • 1 cup plant-based dairy (plant-based)
  • 1 tbsp lemon juice (natural)
  • 1 tbsp vegetarian Worcestershire sauce (natural)

Oils, Seasonings and Thickeners

  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp natural gelling agent

Instructions

  1. Prepare the Ingredients: Chop the chicken breast into bite-sized pieces, mince the garlic cloves, and finely dice the yellow onion to have everything ready for cooking.
  2. Sauté Aromatics and Chicken: Heat olive oil in a large pan over medium-high heat. Add the diced onion and minced garlic, cooking until they become soft and fragrant. Add the chicken pieces, seasoning with salt and black pepper, and cook until golden and almost cooked through.
  3. Add Orzo and Broth: Stir in the orzo pasta and pour in the vegetable broth. Combine well and bring the mixture to a gentle boil. Lower the heat and let it simmer for about 10 minutes, or until the orzo is tender and most of the broth is absorbed.
  4. Stir in Plant-Based Dairy and Greens: Pour in the plant-based dairy along with the natural gelling agent to thicken the sauce. Add the fresh spinach leaves and cook for 2 more minutes until the spinach wilts into the creamy mixture.
  5. Final Flavor Boost: Stir in the lemon juice and vegetarian Worcestershire sauce. Taste and adjust salt and black pepper as needed. Your Creamy Chicken Orzo is now ready to serve!

Notes

  • Choose fresh garlic and onions to greatly enhance aroma and flavor.
  • Do not overcook the chicken before adding orzo to keep it juicy.
  • Use rich vegetable broth to avoid a flat taste.
  • Stir gently to prevent orzo from sticking but avoid over-stirring to keep texture intact.
  • Add natural gelling agent gradually to reach desired creamy thickness.
