This recipe offers a nostalgic taste with a fresh, customizable twist for a hearty lunch or quick dinner.

Ingredients

Scale

Tuna Salad

  • 1 can tuna in water, drained thoroughly
  • 3 tbsp plant-based mayonnaise
  • 1/4 cup celery, diced
  • 2 tbsp red onion, finely chopped
  • 1 tsp apple cider vinegar (natural)
  • 1 tsp Dijon mustard (natural)
  • Salt, to taste
  • Pepper, to taste

Crispy Layer

  • 4 strips smoked turkey bacon

Cheese and Bread

  • 4 slices plant-based cheese (melting variety)
  • 4 slices whole grain bread
  • 1 tbsp plant-based butter or oil for toasting

Instructions

  1. Prepare the Tuna Salad: Drain the canned tuna thoroughly and transfer it to a medium bowl. Add plant-based mayonnaise, diced celery, finely chopped red onion, a splash of apple cider vinegar (natural), and Dijon mustard (natural). Season with salt and pepper. Mix gently until combined, keeping some texture.
  2. Cook the Smoked Turkey Bacon: Place smoked turkey bacon strips in a nonstick pan over medium heat. Cook 3 to 5 minutes per side until crispy and browned. Remove and drain excess oil on paper towels.
  3. Assemble the Sandwich: Lay out whole grain bread slices and spread a generous layer of tuna salad on one side of each slice. Top with crispy smoked turkey bacon, then add slices or shreds of plant-based cheese.
  4. Toast to Perfection: Close the sandwiches with the other bread slices. Preheat a skillet over medium heat, add plant-based butter or oil, and cook the sandwiches on each side until the bread is golden brown and the cheese melts.
  5. Serve Warm: Remove sandwiches from heat and let rest for a minute to stabilize the melted cheese. Slice diagonally and enjoy.

Notes

  • Drain tuna very well to avoid soggy sandwiches.
  • Use sharp plant-based cheese to boost flavor.
  • Toast sandwiches on moderate heat to prevent burning before melting cheese.
  • Finely chop celery and onion for balanced texture and flavor.
  • Let the sandwich rest briefly after cooking for optimal melting and flavor melding.
