  • 1 tbsp light sweetener (such as maple syrup natural or brown sugar)

Instructions

  1. Prepare the Dough: Warm the plant-based milk until lukewarm, then dissolve the active dry yeast and 1 tablespoon of brown sugar in it. Allow it to sit for 5 to 10 minutes until frothy. In a large bowl, mix the flour, remaining brown sugar, salt, cinnamon, nutmeg, and cloves. Slowly add the yeast mixture, apple cider vinegar, and softened plant-based butter. Knead the dough until smooth and elastic. Cover and let it rise in a warm place for 1 to 1.5 hours until doubled in size.
  2. Make the Filling: While the dough rises, mix the softened plant-based butter with brown sugar, cinnamon powder, and vegetarian Worcestershire sauce (natural) until well combined to create a rich and aromatic filling.
  3. Roll and Fill the Dough: After the dough has doubled, roll it out on a floured surface into a rectangle about 1/4 inch thick. Spread the prepared filling evenly over the surface, covering every corner. Starting from the longer edge, roll the dough tightly into a log, then cut into equal portions to form individual buns.
  4. Second Rise: Place the cut buns in a lightly greased baking dish, leaving space between them for expansion. Cover with a clean cloth and allow them to rise again for 30 to 45 minutes until puffy and nearly doubled in size.
  5. Bake to Perfection: Preheat the oven to 180°C (350°F). Bake the buns for 20 to 25 minutes until golden brown and cooked through. Meanwhile, prepare the glaze by dissolving the natural gelling agent in plant-based milk and mixing in the light sweetener. Brush the glaze over the warm buns immediately after removing them from the oven for a shiny finish.
