Ingredients

Scale

Base Ingredients

  • 2 cups cooked white or brown rice, cooled
  • 2 cooked chicken breasts, shredded
  • 4 slices smoked turkey bacon, cooked and chopped

Fresh Vegetables

  • 1 cup diced cucumber
  • 1 cup sliced cherry tomatoes
  • 1 cup chopped bell peppers
  • 3 green onions, finely sliced
  • ½ cup fresh cilantro leaves, chopped

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetarian Worcestershire sauce (natural)
  • 1 teaspoon honey (natural)
  • 1 teaspoon mustard (natural)
  • ¼ teaspoon natural gelling agent (optional)

Instructions

  1. Prepare the crispy rice: Spread the cooled cooked rice evenly on a baking sheet. Lightly toast it in a preheated oven at 375°F (190°C) until golden and crispy, about 15-20 minutes, stirring once to ensure even crisping.
  2. Cook and shred the chicken: Poach or grill the chicken breasts until fully cooked, then let them cool slightly before shredding into bite-sized pieces.
  3. Cook smoked turkey bacon: In a skillet over medium heat, cook the smoked turkey bacon until crispy. Remove and chop into small pieces once cooled.
  4. Chop fresh vegetables: Dice the cucumbers and bell peppers, slice the cherry tomatoes in halves, and finely slice the green onions. Set aside.
  5. Mix the dressing: In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, vegetarian Worcestershire sauce (natural), honey (natural), and mustard (natural). If desired, add the natural gelling agent and mix well until smooth and tangy.
  6. Toss everything together: In a large bowl, combine the crispy rice, shredded chicken, chopped smoked turkey bacon, fresh vegetables, and cilantro. Pour the dressing over the salad and gently toss until everything is evenly coated.

Notes

  • Use day-old or thoroughly cooled rice to achieve optimal crispiness.
  • Pat the fresh vegetables dry to avoid excess moisture diluting the flavors.
  • Chill the salad in the refrigerator for 15-20 minutes before serving to let flavors meld.
  • Adjust the acidity in the dressing by varying lemon juice or vinegar according to personal taste.
  • Add the crispy rice and bacon just before serving to maintain their crunch.
