Ingredients
Scale
Chicken
- 4 skin-on, boneless chicken thighs or breasts
- Salt and pepper, to taste
- 1 tablespoon oil
Garlic Gravy
- 4 cloves fresh garlic, minced
- 1 cup vegetable broth
- 2 tablespoons vegetarian Worcestershire sauce (natural)
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
- 1 teaspoon natural gelling agent, dissolved in 2 tablespoons water
Cheesy Mashed Potatoes
- 2 pounds Yukon Gold or Russet potatoes, peeled and cut into chunks
- 1/2 cup cheesy (plant-based), shredded or cubed
- 1/4 cup cashew cream or plant-based milk (warmed)
- 2 tablespoons vegan butter or plant-based butter
- Salt, to taste
Garnish
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Prepare the Chicken: Season chicken thighs or breasts generously with salt and pepper. Heat oil in a skillet over medium heat and sear the chicken until golden brown on both sides and cooked through. Remove chicken from skillet and keep warm.
- Make the Garlic Gravy: In the same skillet, add the minced fresh garlic and sauté gently until fragrant but not browned. Pour in vegetable broth, vegetarian Worcestershire sauce (natural), apple cider vinegar, salt, and pepper. Let simmer and reduce slightly. Stir in the natural gelling agent dissolved in water to thicken, cooking until the gravy coats the back of a spoon smoothly.
- Boil and Mash Potatoes: While making gravy, boil potatoes in salted water for 15-20 minutes until tender. Drain well and return to pot. Add cheesy (plant-based), cashew cream or warmed plant-based milk, vegan butter, and salt. Mash until smooth and fluffy with no lumps.
- Combine and Serve: Slice or shred the cooked chicken and plate alongside a generous serving of mashed potatoes. Pour garlic gravy over the chicken and garnish with fresh parsley. Serve immediately while warm.
Notes
- Do not overcrowd the pan when searing chicken to ensure a golden crust.
- Use fresh garlic for the best aromatic flavor in the gravy.
- Warm plant-based milk or cashew cream before adding to mashed potatoes to keep them fluffy.
- Add the natural gelling agent gradually and stir well to avoid lumps in the gravy.
- Let the cooked chicken rest for a few minutes to retain juiciness.
