Ingredients

Scale

Main Ingredients

  • 1 package pierogis (frozen or fresh, gluten-free)
  • 1 lb ground beef
  • 6 slices smoked turkey bacon
  • 1 1/2 cups shredded plant-based cheddar cheese
  • 1 tablespoon ranch seasoning (natural)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetarian Worcestershire sauce (natural)
  • 1 tablespoon apple cider vinegar
  • 1/2 cup plant-based sour cream
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare and Cook the Pierogis: Boil or pan-fry the pierogis according to package instructions until they are tender and slightly golden. Set aside to cool while you prepare the other ingredients.
  2. Cook the Smoked Turkey Bacon: In a large skillet over medium heat, cook the smoked turkey bacon until it’s crisp and fragrant. Remove and drain on paper towels, then chop into bite-sized pieces to sprinkle over the bake later.
  3. Sauté Aromatics and Brown Beef: Using the same skillet, add olive oil and sauté finely chopped onion and garlic until translucent and fragrant. Add the ground beef along with the vegetarian Worcestershire sauce and apple cider vinegar. Cook until browned and flavorful, breaking up any clumps.
  4. Combine Ingredients with Ranch Seasoning: Reduce heat and stir in the ranch seasoning (natural) and plant-based sour cream. Mix thoroughly, allowing all ingredients to meld into a creamy, tangy filling.
  5. Layer the Bake: In a greased casserole dish, start with a layer of pierogis, followed by a generous spread of the beef mixture. Sprinkle chopped smoked turkey bacon and shredded plant-based cheddar cheese evenly over the top. Repeat layers if desired, finishing with cheese on top.
  6. Bake Until Bubbly and Golden: Place the dish in a preheated oven at 375°F (190°C) and bake for 25 to 30 minutes until the cheese is melted, golden, and bubbling. Let the bake rest for a few minutes before serving to allow flavors to settle.

Notes

  • Choose quality pierogis: Using fresh or premium frozen pierogis will elevate the texture in your bake.
  • Don’t overcook beef: Brown just until cooked through to keep it juicy and flavorful.
  • Layer evenly: Make sure every bite gets a balance of pierogi, beef, bacon, and cheese for the best experience.
  • Rest before serving: Letting the bake cool slightly helps it firm up and makes portions neater.
  • Use fresh herbs: Garnish with fresh parsley to add brightness and a pop of color.
