Instructions
- Caramelize the onions: Heat olive oil in a skillet over medium-low heat. Add thinly sliced onions and salt. Stir occasionally and cook for about 30 to 40 minutes until onions turn deep golden brown, soft, and sweet.
- Cook the smoked turkey bacon: In a separate pan, cook the smoked turkey bacon over medium heat until crispy but not burnt. Drain excess fat and chop into bite-sized pieces.
- Prepare the egg mixture: In a large bowl, whisk together the eggs, salt, pepper, fresh herbs, and natural gelling agent until well combined. Fold in the plant-based cheese and cooked smoked turkey bacon gently.
- Combine and cook the frittata: Add the caramelized onions into the egg mixture and stir gently just to combine. Preheat a skillet or oven-safe pan with some olive oil, then pour the mixture evenly into it.
- Cook and finish under the broiler: Cook the frittata over medium heat for 5 to 7 minutes until the edges start to set. Transfer the pan to a preheated oven or place under a broiler for about 3 to 5 minutes until the top is fully set and lightly golden.
