Instructions

  1. Caramelize the onions: Heat olive oil in a skillet over medium-low heat. Add thinly sliced onions and salt. Stir occasionally and cook for about 30 to 40 minutes until onions turn deep golden brown, soft, and sweet.
  2. Cook the smoked turkey bacon: In a separate pan, cook the smoked turkey bacon over medium heat until crispy but not burnt. Drain excess fat and chop into bite-sized pieces.
  3. Prepare the egg mixture: In a large bowl, whisk together the eggs, salt, pepper, fresh herbs, and natural gelling agent until well combined. Fold in the plant-based cheese and cooked smoked turkey bacon gently.
  4. Combine and cook the frittata: Add the caramelized onions into the egg mixture and stir gently just to combine. Preheat a skillet or oven-safe pan with some olive oil, then pour the mixture evenly into it.
  5. Cook and finish under the broiler: Cook the frittata over medium heat for 5 to 7 minutes until the edges start to set. Transfer the pan to a preheated oven or place under a broiler for about 3 to 5 minutes until the top is fully set and lightly golden.
