Instructions

  1. Cook the pasta: Boil the rotini pasta in salted water until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta down for the salad.
  2. Prepare the smoked turkey bacon: While the pasta cooks, heat a non-stick pan over medium heat and crisp up the smoked turkey bacon until golden and slightly crunchy. Drain on paper towels and chop into bite-sized pieces once cooled.
  3. Chop the fresh veggies: Dice the cucumber, halve the cherry tomatoes, finely chop the bell peppers, and thinly slice the red onion. Chop fresh parsley and set aside.
