Instructions

  1. Prepare the Vegetables: Wash and chop the broccoli florets into bite-sized pieces. Rinse the fresh spinach leaves and roughly chop if desired. Lightly steam or blanch the broccoli until slightly softened but still crisp, then drain thoroughly to remove excess moisture.
  2. Cook the Smoked Turkey Bacon: Heat olive oil in a large skillet over medium heat. Cook the smoked turkey bacon until crisp and fragrant. Remove the bacon from the skillet and set aside, leaving some rendered fat in the pan.
  3. Sauté Onion and Garlic: In the same skillet, add the diced onion and minced garlic. Sauté gently until onions become translucent and soft, stirring frequently to prevent burning. This creates a flavorful base for the casserole.
  4. Mix Ingredients and Cheese Sauce: In a mixing bowl, combine the steamed broccoli, sautéed onion and garlic, fresh spinach leaves, and crispy smoked turkey bacon. In a separate saucepan, warm the milk substitute, then melt the plant-based cheese with the natural gelling agent and vegetarian Worcestershire sauce (natural) until smooth, creamy, and well combined.
  5. Combine and Bake: Pour the cheese sauce over the vegetable mixture and gently fold to combine. Transfer everything into a lightly oiled baking dish and smooth the top. Bake in a preheated oven at 350°F (175°C) for 30 minutes or until bubbly and lightly golden on top.
