Ingredients

Scale

Main Ingredients

  • 4 lbs Beef Short Ribs
  • 3 large Carrots, chopped
  • 2 large Onions, chopped
  • 4 cloves Garlic, minced
  • 2 tbsp Tomato Paste (natural)
  • 2 tbsp Vegetarian Worcestershire Sauce (natural)
  • 3 cups Beef Broth
  • 2 tbsp Apple Cider Vinegar
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 1 tsp Natural Gelling Agent

Instructions

  1. Prep the Ribs and Vegetables: Pat the beef short ribs dry, and season generously with salt and pepper. Chop carrots and onions into chunky pieces, and mince the garlic finely to prepare for cooking.
  2. Searing the Ribs: Heat olive oil in a heavy pot over medium-high heat. Sear the ribs on all sides until they are beautifully browned, locking in flavors and creating a base for the sauce.
  3. Cooking the Aromatics: Remove ribs from the pot. Add chopped onions, carrots, and garlic, and cook until softened and golden. Stir in tomato paste (natural) and vegetarian Worcestershire sauce (natural) for a rich umami flavor.
  4. Adding Liquids and Herbs: Return ribs to the pot. Pour in beef broth, apple cider vinegar, and add fresh thyme and bay leaves. Bring to a gentle simmer, ensuring ribs are partially submerged for even braising.
  5. Slow Braising: Cover the pot tightly and place in a 300°F oven or maintain on low heat on the stove. Cook slowly for 2.5 to 3 hours until ribs are tender and fall off the bone.
  6. Finishing the Sauce: Remove ribs and strain or blend the vegetables into a smooth sauce. Add natural gelling agent to thicken as needed. Return ribs to coat with the sauce before serving.

Notes

  • Sear thoroughly for maximum flavor development.
  • Maintain a gentle simmer to achieve tender, juicy ribs.
  • Let ribs rest in the sauce off heat for a few minutes to soak up flavors.
  • Use natural gelling agent sparingly to adjust sauce thickness.
  • Use fresh herbs like thyme and bay leaves for enhanced aroma.
