Chile Sauce

  • 3 dried guajillo chiles
  • 3 dried ancho chiles
  • 4 garlic cloves
  • 1 medium onion, chopped
  • 2 tablespoons tomato paste (natural)
  • 2 tablespoons vegetarian Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt to taste

Instructions

  1. Prepare the Chile Sauce: Soak the dried guajillo and ancho chiles in hot water until they become soft, about 15 minutes. Then blend the soaked chiles with garlic cloves, chopped onion, tomato paste (natural), vegetarian Worcestershire sauce, apple cider vinegar, ground cumin, oregano, and salt until you achieve a smooth, rich sauce.
  2. Marinate the Meat: Coat the beef chuck or lamb shoulder evenly with the prepared chile sauce. Cover the meat and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to deeply infuse the meat.
  3. Slow Cook the Meat: Transfer the marinated meat into a slow cooker or heavy pot. Add the bay leaves and any remaining sauce. Cook gently on low heat for 3 to 4 hours, or until the meat is extremely tender and easy to shred.
  4. Shred and Dip: Remove the cooked meat and shred it using forks. Keep the shredded meat warm in the cooking juices. Briefly dip the corn tortillas into the broth to soak up the rich flavors before filling them with the shredded meat.
  5. Assemble and Serve: Fill each tortilla generously with shredded meat. Fold them neatly and optionally sear them on a hot skillet until slightly crispy.
