Ingredients
Scale
Beef and Broccoli
- 300g beef strips, thinly sliced
- 300g broccoli florets, fresh and crisp
- 3 tbsp soy sauce (natural)
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar (natural)
- 1 tbsp vegetarian Worcestershire sauce
- 1 tbsp cornstarch mixed with 3 tbsp water (natural gelling agent)
- 2 tbsp sesame oil (natural)
Instructions
- Prepare the Ingredients: Thinly slice the beef and chop the broccoli into bite-sized florets. Mince the garlic and grate fresh ginger to have all ingredients ready before cooking.
- Marinate the Beef: In a bowl, combine soy sauce (natural), apple cider vinegar, brown sugar (natural), vegetarian Worcestershire sauce, and a dash of sesame oil (natural). Toss the beef slices in this marinade and let it rest for about 10 minutes.
- Blanch the Broccoli: Bring a pot of water to a boil and blanch the broccoli florets for 1 to 2 minutes. Immediately plunge into cold water to preserve color and crispness.
- Stir-Fry the Beef: Heat a skillet or wok over medium-high heat and add a splash of sesame oil (natural). Quickly stir-fry the marinated beef until browned but still tender, about 2 to 3 minutes. Remove beef and set aside.
- Cook the Aromatics and Combine: In the same pan, add more sesame oil (natural) if needed and sauté minced garlic and grated ginger until fragrant. Add blanched broccoli and stir to combine.
- Thicken the Sauce and Finish: Return beef to the pan and pour in the cornstarch-water mixture (natural gelling agent). Stir continuously as the sauce thickens and coats the beef and broccoli evenly. Remove from heat once sauce reaches desired consistency.
Notes
- Choose tender cuts like sirloin or flank steak for the best texture and flavor.
- Stir-fry in batches to avoid overcrowding the pan for even cooking.
- Keep heat high for a quick sear but adjust to prevent burning garlic or ginger.
- Add the natural gelling agent mixture slowly to control sauce thickness.
- Let marinated beef rest to develop richer flavors.
