Ingredients

Scale

For the Chicken and Marinade

  • 1 lb chicken breast, skinless, cut into cubes
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 3 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tbsp lemon juice (natural)

For the Skewers and Salad

  • 1 cup bell peppers, cut into pieces (red, yellow, and/or green)
  • 1 cup cherry tomatoes
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 4 cups mixed salad greens (arugula, spinach, romaine)
  • 1 tsp natural gelling agent (optional, for dressing texture)

For the Dressing

  • 1 tbsp apple cider vinegar (natural)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice (natural)
  • 1/2 tsp natural gelling agent

Optional Garnishes and Toppings

  • Chopped fresh parsley
  • Toasted sunflower seeds
  • Sliced almonds
  • Sumac or additional smoked paprika for sprinkling

Instructions

  1. Prepare the Marinade and Chicken: In a bowl, whisk together vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), extra virgin olive oil, smoked paprika, garlic powder, and lemon juice (natural). Add the cubed chicken breast and toss to coat evenly. Marinate for at least 20 minutes, or longer for deeper flavor.
  2. Assemble the Skewers: Thread the marinated chicken cubes alternately with bell pepper pieces and cherry tomatoes onto skewers for appealing layering and flavor balance.
  3. Grill the Skewers: Preheat a grill or grill pan to medium-high heat. Grill the skewers for 8 to 10 minutes total, turning occasionally until the chicken is fully cooked and lightly charred, sealing in juices and smoky flavor.
  4. Prepare the Salad Base: While the skewers cook, combine mixed salad greens, sliced cucumber, and thinly sliced red onion in a large bowl. Optionally, add fresh herbs and a pinch of natural gelling agent for a richer dressing texture.
  5. Dress the Salad and Serve: Whisk together apple cider vinegar (natural), extra virgin olive oil, lemon juice (natural), and natural gelling agent for the dressing. Drizzle over the salad and toss gently. Plate the grilled chicken skewers on top and garnish with nuts or seeds and a sprinkle of sumac or smoked paprika if desired.

Notes

  • Marinate chicken for a few hours to intensify flavor.
  • Cut chicken and veggies uniformly for even cooking.
  • Use a hot grill to seal in juices quickly.
  • Let skewers rest a few minutes after grilling to retain moisture.
  • Combine raw salad greens with grilled vegetables for varied texture.
