Description

Asparagus Casserole with Ritz Crackers is a comforting and creamy plant-based dish featuring tender asparagus blended with melted plant-based cheese, encased in a luscious sauce and topped with a crunchy Ritz cracker crust. Ideal as a versatile side or a vegetarian main, it combines simple ingredients into an elegant, texture-rich casserole perfect for family dinners or special occasions.

Ingredients

Scale

Vegetables and Aromatics

  • 1 lb tender asparagus, trimmed and cut into bite-size pieces
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • Fresh herbs such as parsley or thyme, chopped (about 2 tbsp)

Creamy Sauce Base

  • 2 cups plant-based milk
  • 1 tsp natural gelling agent
  • 1 cup plant-based cheese, shredded or sliced
  • 1 tbsp vegetarian Worcestershire sauce (natural)
  • Salt, to taste
  • Black pepper, to taste

Topping

  • 1 ½ cups Ritz crackers, crushed coarsely
  • 2 tbsp melted plant-based butter or oil, for drizzling
  • Additional fresh herbs for garnish (optional)

Instructions

  1. Prepare the Asparagus: Trim the tough ends off the asparagus and cut the stalks into bite-size pieces. Blanch them in boiling water for 2 to 3 minutes until tender-crisp, then transfer immediately to ice water to preserve vibrant color and stop the cooking process.
  2. Sauté Aromatics: Heat a small amount of oil in a pan over medium heat. Add the finely chopped onion and garlic, sautéing until fragrant and translucent to build the flavorful base of the casserole.
  3. Make the Creamy Sauce: In a saucepan, combine the plant-based milk with the natural gelling agent and gently heat. Add the plant-based cheese and stir until melted, smooth, and thickened. Season with vegetarian Worcestershire sauce (natural), salt, pepper, and fresh herbs. Fold in the sautéed onion and garlic mixture.
  4. Combine and Transfer: Carefully fold the blanched asparagus into the creamy sauce. Pour the mixture into a casserole dish brushed with plant-based oil or butter.
  5. Add the Ritz Cracker Topping: Coarsely crush the Ritz crackers and evenly sprinkle them over the surface of the casserole. Drizzle melted plant-based butter or oil on top for a golden, crispy finish.
  6. Bake to Perfection: Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the topping is golden brown and the filling is bubbling gently around the edges.

Notes

  • Choose fresh asparagus for the best flavor and texture.
  • Do not overcook the asparagus; blanch briefly to retain slight crunch and color.
  • Use plant-based cheeses that melt smoothly to ensure a creamy filling.
  • Allow the casserole to rest a few minutes after baking to set properly.
  • Spread cracker topping evenly and keep pieces slightly coarse to maintain crunch.
