Perfect as a light lunch or revitalizing dinner, it delivers a balanced combination of textures and bold flavors in under 30 minutes.

Ingredients

Scale

Salad

  • 200g rice noodles
  • 1 cucumber, diced
  • 2 medium carrots, julienned or grated
  • 1 red bell pepper, julienned
  • 3 green onions, thinly sliced
  • 1/2 cup fresh cilantro, roughly chopped
  • 6 slices smoked turkey bacon, cooked crisp and crumbled
  • 1/4 cup peanuts, chopped

Dressing (natural)

  • 3 tbsp soy sauce (natural)
  • 2 tbsp sesame oil (natural)
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey (natural)
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 tsp red chili flakes (optional)
  • 1/2 tsp natural gelling agent

Instructions

  1. Prepare the Noodles: Cook the rice noodles according to package instructions until tender but still chewy. Rinse under cold water to stop cooking and drain thoroughly to prevent sogginess.
  2. Chop and Prepare Vegetables: While noodles cook, dice cucumber, julienne carrots and red bell pepper, thinly slice green onions, and roughly chop fresh cilantro. Place all chopped vegetables in a large mixing bowl.
  3. Cook Smoked Turkey Bacon: In a skillet over medium heat, cook smoked turkey bacon until crisp. Drain on paper towels and crumble into bite-sized pieces.
  4. Whisk the Dressing (natural): In a small bowl, combine soy sauce (natural), sesame oil (natural), apple cider vinegar, honey (natural), minced garlic, grated ginger, red chili flakes if using, and natural gelling agent. Whisk thoroughly until well blended.
  5. Combine All Ingredients: Add cooked noodles to the bowl with vegetables. Drizzle dressing evenly over the mixture and toss gently yet thoroughly to coat every strand. Fold in crisp smoked turkey bacon and sprinkle peanuts on top before serving.

Notes

  • Rinse noodles immediately after cooking with cold water to keep them from sticking and maintain texture.
  • Toss noodles gently to avoid breaking and keep salad visually appealing.
  • Use fresh cilantro and green onions for bright, herbal flavor.
  • Adjust vinegar or honey in dressing to balance acidity and sweetness to your taste.
  • Serve salad chilled or at room temperature for the best flavor experience.
