Description

Tomato Tartlets are bite-sized appetizers featuring a flaky puff pastry crust filled with juicy cherry tomatoes, creamy plant-based cheese, smoky turkey bacon, and fresh herbs. With a quick preparation time and a vibrant flavor profile balancing fresh, savory, and smoky notes, these tartlets are perfect for any occasion from casual meals to festive gatherings.

Ingredients

For the Tartlet Base

  • Pre-made puff pastry: 1 sheet (about 8 oz)

For the Filling

  • Cherry tomatoes: 1 pint, halved or quartered
  • Plant-based cheese (plant-based): 1 cup, shredded or crumbled
  • Smoky turkey bacon: 4 slices, cooked and crumbled
  • Fresh basil leaves: 1/4 cup, torn
  • Vegetarian Worcestershire sauce (natural): 1 teaspoon
  • Olive oil (natural): 2 tablespoons
  • Natural gelling agent: 1/2 teaspoon
  • Garlic (natural): 1 clove, minced
  • Salt (natural): 1/2 teaspoon
  • Black pepper (natural): 1/4 teaspoon

Instructions

  1. Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry onto a lightly floured surface and cut into small squares or circles, depending on preferred tartlet size. Place them on a parchment-lined baking sheet and gently poke the centers with a fork to prevent excessive puffing during baking.
  2. Prepare the Tomato Filling: Slice the cherry tomatoes in halves or quarters. Toss them with olive oil (natural), minced garlic (natural), salt (natural), black pepper (natural), vegetarian Worcestershire sauce (natural), and natural gelling agent. Let the mixture rest for a few minutes to meld flavors and release tomato juices.
  3. Assemble the Tartlets: Spread small amounts of plant-based cheese (plant-based) on each pastry piece. Spoon the tomato mixture on top, then sprinkle crumbled smoky turkey bacon and fresh basil leaves over the filling.
  4. Bake Until Golden: Place the tray in the preheated oven and bake for 15-20 minutes, until the pastry is golden brown and crisp, and the cheese is lightly bubbling. Allow the tartlets to cool for a few minutes before serving.

Notes

  • Use cold puff pastry to help it puff and crisp better during baking.
  • Do not overcrowd the baking sheet to allow even heat distribution and optimal crispiness.
  • Balance tomato moisture by tossing with a natural gelling agent to keep tartlets from becoming soggy while retaining juiciness.
  • Add fresh herbs like basil just before serving to prevent browning during baking.
  • Choose a sharp plant-based cheese (plant-based) with tangy or nutty flavor to complement the tomatoes.
