  • 12 oz plant-based minced meat
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup corn kernels
  • 2 tbsp tomato paste (natural)
  • 2 tbsp vegetarian Worcestershire sauce (natural)
  • 1 tbsp apple cider vinegar (natural)
  • 1/2 cup vegetable broth
  • 1 tsp natural gelling agent
  • 1 tsp fresh rosemary or thyme, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the mashed potatoes: Peel and cut the potatoes into even chunks. Boil them in salted water until tender, about 15 minutes. Drain and mash with plant-based butter, warm plant-based milk, salt, and pepper until smooth and creamy. Set aside.
  2. Cook the filling: Heat olive oil in a large skillet over medium heat. Add chopped onions and garlic and sauté until soft and fragrant. Add plant-based minced meat and cook until browned. Stir in diced carrots, peas, and corn, mixing well.
  3. Build the savory flavor: Stir in tomato paste (natural), vegetarian Worcestershire sauce (natural), apple cider vinegar (natural), and vegetable broth. Sprinkle in natural gelling agent to thicken the mixture. Simmer gently until filling is rich and slightly thickened. Season with salt, pepper, and fresh herbs to taste.
  4. Assemble the pie: Transfer the filling to a baking dish and spread evenly. Spoon the mashed potatoes on top in a smooth layer. Use a fork to create textured peaks for a crispy topping.
