Instructions

Pour in beef broth, then simmer gently until the mixture thickens and flavors meld, about 10 minutes.
  2. Make the Plant-Based Mashed Potatoes: Boil peeled potatoes in salted water until fork-tender, about 15-20 minutes. Drain, then mash with plant-based butter and unsweetened plant-based milk, seasoning with salt and pepper to taste. Mash just until smooth and creamy without overworking.
