Instructions

  1. Prepare the Ingredients: Wash and finely grate the fresh carrots. Pit the dates and roughly chop the walnuts. Measure out the rolled oats, shredded coconut, spices, chia seeds, and natural gelling agent. This ensures all components are ready for easy blending.
  2. Blend the Dates and Carrots: In a food processor, pulse the dates and grated carrots until they form a sticky, cohesive mixture. This sticky base binds the bites naturally without added sugars.
  3. Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped walnuts, shredded coconut, chia seeds, ground cinnamon, and ground nutmeg. Stir well to evenly distribute the ingredients.
  4. Combine Wet and Dry: Add the date-carrot mixture, plant-based cream cheese (plant-based), vanilla extract (natural), and natural gelling agent to the dry ingredients. Stir thoroughly to combine. If the mixture feels crumbly, add a small amount of grape juice (natural) to help it come together.
