Marry Me Chicken Pasta is a creamy, comforting dish featuring tender chicken thighs, smoky turkey bacon, and melty plant-based cheese in a rich, velvety sauce. Enhanced with sun-dried tomatoes, garlic, and fresh basil, this easy-to-make pasta delivers balanced flavors and satisfying textures perfect for any weeknight or special occasion meal.

Ingredients

Scale

Proteins

  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 4 slices smoked turkey bacon

Dairy & Sauces

  • 1 cup plant-based heavy cream
  • 1 cup plant-based cheese, shredded or sliced
  • 1 tablespoon vegetarian Worcestershire sauce (natural)

Produce & Seasonings

  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Pantry & Others

  • 8 oz pasta of choice (penne, fettuccine, or rigatoni)
  • 1 teaspoon apple cider vinegar (natural)
  • 1 tablespoon olive oil
  • 1 teaspoon natural gelling agent

Instructions

  1. Prepare the Chicken and Bacon: Cut the boneless chicken thighs into bite-sized pieces. Heat olive oil in a large skillet over medium heat, then add smoked turkey bacon and cook until crisp. Remove bacon and set aside. Add chicken pieces to the skillet, season with salt and pepper, and cook until golden brown and almost cooked through. Remove chicken and keep warm.
  2. Create the Creamy Sauce: In the same skillet, add more olive oil if needed and sauté minced garlic until fragrant. Pour in plant-based heavy cream, then stir in vegetarian Worcestershire sauce, apple cider vinegar, and sun-dried tomatoes. Add the natural gelling agent and stir consistently. Let the sauce simmer gently while stirring occasionally. Melt in the plant-based cheese until smooth and rich.
  3. Combine Pasta with Sauce and Protein: Cook pasta according to package instructions until al dente. Drain, then add pasta directly to the skillet with the creamy sauce. Add the sautéed chicken and crispy turkey bacon, tossing gently to coat evenly.
  4. Finish with Fresh Herbs: Remove skillet from heat and stir in chopped fresh basil. Taste and adjust seasoning with salt and pepper as needed. Serve immediately for best flavor and texture.

Notes

  • Use room temperature plant-based cream and cheese for even melting.
  • Remove chicken when just cooked through to retain juiciness.
  • Toast garlic on medium-low heat to avoid burning and maintain a mellow flavor.
  • Reserve some pasta water before draining to adjust sauce consistency if necessary.
  • Simmer sauce gently on low heat to achieve creamy texture without curdling.
