Description

Cheesy Garlic Parmesan Spaghetti is a quick and easy comforting dinner featuring creamy plant-based cheese, fresh garlic, and a splash of natural apple cider vinegar for a balanced and rich flavor. Ready in about 30 minutes, this satisfying pasta dish is perfect for busy weeknights and guaranteed to become a favorite.

Ingredients

Scale

Spaghetti

  • 200g spaghetti (or preferred gluten-free pasta)

Sauce

  • 2 tablespoons plant-based butter
  • 4 fresh garlic cloves, minced
  • 1 cup plant-based cream
  • 1 tablespoon natural apple cider vinegar
  • 1 cup plant-based Parmesan cheese, shredded or grated
  • Salt, to taste
  • Black pepper, to taste

Garnish (optional)

  • Fresh parsley, chopped

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water for later use.
  2. Sauté garlic in plant-based butter: In a large skillet, melt the plant-based butter over medium heat. Add the minced garlic and sauté gently until fragrant and golden, taking care not to burn it.
  3. Make the creamy sauce: Pour in the plant-based cream and stir well. Add the natural apple cider vinegar, salt, and pepper, allowing the sauce to simmer gently and thicken slightly. If needed, stir in a bit of the reserved pasta water to loosen the sauce to desired consistency.
  4. Add plant-based Parmesan cheese: Mix in the plant-based Parmesan cheese until melted and fully combined, giving the sauce that unmistakable cheesy flavor and silky texture.
  5. Combine spaghetti and sauce: Toss the cooked spaghetti into the sauce, making sure every strand is evenly coated. Heat through just until warm, then remove from heat.
  6. Serve with fresh parsley: Garnish with freshly chopped parsley for a burst of color and a fresh herbal note to finish off your dish beautifully.

Notes

  • Do not overcook pasta: Al dente spaghetti helps maintain texture and prevents the dish from becoming mushy.
  • Use fresh garlic for the best aroma and flavor.
  • Adjust creaminess by reserving pasta water to perfect sauce consistency.
  • Choose a flavorful plant-based Parmesan cheese for best results.
  • Warm the sauce gently to avoid separation or curdling.
