Description

Enjoy a rich and creamy Caramel Apple Cheesecake featuring a buttery crust, smooth cheesecake filling, and tender caramelized apples. This dessert combines classic flavors with a sweet apple caramel twist, perfect for any occasion. Easy to prepare and visually stunning with its golden caramel glaze and apple topping, it offers warmth and comfort in every bite.

Ingredients

Scale

Crust

  • 1 1/2 cups finely crushed graham crackers or digestive biscuits
  • 6 tablespoons melted unsalted butter

Apple Topping

  • 3 medium-sized tart apples, peeled and thinly sliced
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon

Cheesecake Filling

  • 24 ounces softened cream cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • About 3/4 cup caramel sauce

Instructions

  1. Prepare the crust: Mix the crushed graham crackers with melted butter until fully combined, then press the mixture evenly into the bottom of a springform pan. Chill in the refrigerator to set firm and crisp while preparing the filling.
  2. Caramelize the apples: In a skillet over medium heat, sauté the apple slices with brown sugar and ground cinnamon until tender and coated in a golden caramel glaze. Set aside to cool slightly.
  3. Make the cheesecake filling: Beat the softened cream cheese with granulated sugar until smooth and fluffy. Add eggs one at a time, mixing well after each. Stir in sour cream and vanilla extract, then gently fold in the caramel sauce to create swirls of sweet richness.
  4. Assemble and bake: Pour half the cheesecake filling over the chilled crust. Arrange half of the caramelized apples evenly on top. Add the remaining cheesecake filling, then layer the rest of the apples on top. Bake at 325°F (160°C) for about 60 minutes or until the edges are set but the center still slightly jiggles.
  5. Cool and chill: Let the cheesecake cool at room temperature for about an hour, then refrigerate for at least 4 hours or overnight to fully set and develop the flavors.

Notes

  • Ensure cream cheese and eggs are at room temperature for a smooth, lump-free filling.
  • Remove the cheesecake from the oven when the center still jiggles slightly to prevent cracks and dryness.
  • Use a water bath by wrapping the springform pan in foil to promote even baking and avoid cracks.
  • Cook apples until tender but firm to prevent a soggy texture in the cheesecake.
  • Chill the cheesecake thoroughly before serving to enhance flavors and achieve the perfect texture.
