Perfect for casual gatherings or special occasions, these cups offer a delightful harmony of flavors and textures that will impress guests and satisfy any palate.
Ingredients
Phyllo Cups
- Phyllo dough sheets, enough for 12 mini cups
- Olive oil, for brushing
Filling and Topping
- Plant-based Brie (plant-based), sliced into small pieces or cubes, about 6 oz
- Fresh blackberries, 24 berries (2 per cup)
- Fresh thyme leaves, about 1 tablespoon
- Honey (natural), for optional drizzle
- Vegetarian Worcestershire sauce (natural), for optional drizzle
Instructions
- Prepare the Phyllo Cups: Preheat your oven to 350°F (175°C). Lightly brush each phyllo sheet with olive oil, stacking 3 to 4 layers per cup to achieve optimal crispiness. Cut the stacked sheets into squares sized to fit your mini muffin tin or phyllo cup mold. Gently press them into the molds to form crisp shells.
- Bake the Phyllo Shells: Place the molds on a baking tray and bake for 8 to 10 minutes or until golden and crisp. Watch carefully to prevent burning. Once baked, remove the shells carefully and allow them to cool completely before filling.
- Prepare the Brie (plant-based) Filling: Slice the plant-based Brie (plant-based) into small pieces or cubes that fit comfortably inside the phyllo cups.
- Assemble the Cups: Fill each phyllo cup with a piece of Brie (plant-based). Top each with 2 to 3 fresh blackberries, then sprinkle a few fresh thyme leaves over each. For added flair, drizzle lightly with honey (natural) or a touch of vegetarian Worcestershire sauce (natural).
- Final Touch and Serve: If desired, warm the assembled cups in the oven for 2 to 3 minutes at 350°F (175°C) until the Brie softens slightly. Otherwise, serve fresh and crisp immediately for the best texture.
Notes
- Keep phyllo covered with a damp towel during preparation to prevent it from drying out.
- Use fresh thyme leaves for a brighter, more fragrant flavor compared to dried herbs.
- Brush olive oil evenly and lightly on phyllo to avoid soggy shells.
- Do not overfill the phyllo cups to maintain crispness and ease of eating.
- Serve the cups immediately after assembly or reheating to preserve the crisp texture.
