Description

This easy and moist Banana Bread recipe uses simple everyday ingredients with the option for plant-based customizations. Perfect for breakfast, snacks, or teatime treats, it delivers rich banana flavor with a tender crumb. Adaptable for various dietary preferences, this bread is soft, flavorful, and loved by all ages.

Ingredients

Scale

Main Ingredients

  • 3 to 4 overripe bananas, mashed
  • 1 ¾ cups all-purpose flour
  • ½ cup brown sugar
  • ⅓ cup vegetable oil
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract (natural)
  • ½ cup plant-based milk
  • Optional: ½ cup chopped nuts (walnuts or pecans)

Instructions

  1. Prepare Your Ingredients and Pan: Preheat your oven to 350°F (175°C) and lightly grease or line a loaf pan with parchment paper. Mash the ripe bananas in a large mixing bowl until smooth but still slightly chunky for texture.
  2. Mix Wet Ingredients: Add the brown sugar, vegetable oil, plant-based milk, and vanilla extract (natural) to the mashed bananas. Stir or whisk until the mixture is well combined and creamy.
  3. Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt for even distribution and to promote a lighter bread.
  4. Mix Together: Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the bread tender. If using nuts or chocolate chips, fold them in now.
  5. Bake: Pour the batter into the prepared pan and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Choose very ripe bananas for maximum sweetness and flavor.
  • Don’t overmix the batter to avoid dense bread.
  • Use room temperature ingredients for better blending and rise.
  • Substitute part of the oil or milk with unsweetened applesauce for added moisture and a healthier version.
  • Allow bread to cool completely before slicing to prevent crumbling.
